  • 6 large eggs
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh spinach
  • 1/4 cup chopped fresh fenugreek leaves (optional)
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup barberries (soaked in water for 10 minutes and drained)
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large mixing bowl, whisk the eggs.

  3. Add the chopped herbs (parsley, cilantro, dill, green onions, spinach, and fenugreek leaves) to the eggs.

  4. Sprinkle in the turmeric, baking powder, salt, and black pepper. Mix well.

  5. Gently fold in the drained barberries.

  6. Heat olive oil in a non-stick oven-safe skillet over medium heat.

  7. Pour the egg mixture into the skillet and spread it evenly.

  8. Cook on medium heat for 5-7 minutes, or until the edges are set.

  9. Transfer the skillet to the preheated oven and bake for 15-18 minutes, or until the top is golden brown and the center is set.

  10. Remove from the oven and let it cool for a few minutes before slicing.

  11. Serve warm or at room temperature.
