Ingredients
- 8 large eggs
- 1 cup of frozen peas, thawed
- 1 cup of cooked beans (such as black beans, kidney beans, or chickpeas)
- 4 oz of goat’s cheese, crumbled
- 1/4 cup of fresh herbs (such as parsley or basil), chopped
- Salt and pepper to taste
- 1 tablespoon of olive oil
Instructions

Preheat the oven to 350°F (175°C).

In a large bowl, whisk the eggs until well beaten. Season with salt and pepper.

Heat the olive oil in a non-stick skillet over medium heat. Add the peas and beans and sauté for 3-4 minutes until heated through.

Pour the beaten eggs over the peas and beans in the skillet. Cook for 2-3 minutes until the edges start to set.

Sprinkle the crumbled goat’s cheese and fresh herbs evenly over the eggs.

Transfer the skillet to the preheated oven and bake for 12-15 minutes until the frittata is set and lightly golden on top.

Remove from the oven and let it cool for a few minutes before slicing.
