How To Make Goat’s Cheese, Pea & Bean Frittata

Ingredients

  • 8 large eggs
  • 1 cup of frozen peas, thawed
  • 1 cup of cooked beans (such as black beans, kidney beans, or chickpeas)
  • 4 oz of goat’s cheese, crumbled
  • 1/4 cup of fresh herbs (such as parsley or basil), chopped
  • Salt and pepper to taste
  • 1 tablespoon of olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, whisk the eggs until well beaten. Season with salt and pepper.

  3. Heat the olive oil in a non-stick skillet over medium heat. Add the peas and beans and sauté for 3-4 minutes until heated through.

  4. Pour the beaten eggs over the peas and beans in the skillet. Cook for 2-3 minutes until the edges start to set.

  5. Sprinkle the crumbled goat’s cheese and fresh herbs evenly over the eggs.

  6. Transfer the skillet to the preheated oven and bake for 12-15 minutes until the frittata is set and lightly golden on top.

  7. Remove from the oven and let it cool for a few minutes before slicing.

  8. Serve hot or at room temperature.
