In a bowl, whisk the eggs until well beaten. Season with salt and pepper.

Heat olive oil in a non-stick skillet over medium heat.

Pour the beaten eggs into the skillet and cook for 2 minutes or until the edges start to set.

Sprinkle feta cheese evenly over the eggs, followed by the chopped semi-dried tomatoes.
