- 8 eggs

- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon vegetable oil

In a large bowl, whisk the eggs until well beaten.

Add the shredded cheese, diced green chilies, red bell peppers, onions, tomatoes, salt, black pepper, and cilantro to the eggs. Mix well.
