- 8 eggs
- 1/4 cup milk
- 1/4 cup sugar
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 tbsp butter
- Powdered sugar, for garnish

In a mixing bowl, whisk together eggs, milk, and sugar until well combined.

Heat a large non-stick skillet over medium heat and melt 1 tbsp butter.

Pour 1/4 of the egg mixture into the skillet and cook for 2-3 minutes, until the edges start to set.

Sprinkle 1/4 cup of mixed berries on one half of the omelette.

Fold the other half of the omelette over the berries and cook for another 1-2 minutes, until the berries are warmed through and the omelette is fully cooked.

Repeat steps 3-5 for the remaining egg mixture and berries.

Serve the berry omelettes hot, sprinkled with powdered sugar.
