How To Make Baked Denver Omelet
Baked Denver omelet is an easy breakfast dish made with bell peppers, onion, ham, milk, and cheese, deliciously whipped with scrambled eggs.

Ingredients
- ½cupred bell pepper,chopped
- ½cupgreen bell pepper,chopped
- ⅓cupyellow onion,chopped
- 2tspolive oil
- 1cupham,heaping, cooked and chopped
- 8large eggs
- ⅓cupmilk
- salt and freshly ground black pepper
- ½cupsharp cheddar cheese,shredded
- avocados,sliced for serving, optional
- chopped chives and hot sauce,for serving, optional
Instructions

Preheat oven to 400 degrees F. Spray a 7×11-inch or 9×9-inch baking dish with cooking spray. Sprinkle ham into an even layer in the bottom of the baking dish.

Heat oil in a skillet over medium-high heat. Once hot, add red and green bell peppers and onion and cook for about 4 minutes until softened. Evenly pour pepper mixture over ham layer then sprinkle evenly with cheese.

In a large mixing bowl whisk together eggs and milk until well blended. Season with salt and pepper and stir, then pour over mixture in baking dish.

Bake in preheated oven for about 22 to 25 minutes until puffy and set. Cut and serve warm with avocado slices and optional chives and hot sauce.
Recipe Notes
If adding bacon or sausage to this omelet instead of ham, make sure to cook and crumble the meat before adding it to the baking dish.
