- 8 spears of asparagus
- 6 large eggs
- 1/4 cup milk
- 1/2 tsp salt

- 1 tbsp olive oil
- 1/2 cup shredded cheese (optional)
Instructions

Trim the tough ends of the asparagus spears and chop them into small pieces.

In a bowl, whisk together the eggs, milk, salt, and black pepper.

Heat olive oil in a frying pan over medium heat. Add the asparagus and sauté for 5 minutes until tender.

Pour the egg mixture over the asparagus in the pan. Cook for 3-4 minutes until the edges are set.
