Ingredients

  • 2 cups of rolled oats
  • 1 cup of canned pumpkin puree
  • 2 cups of milk
  • 1/4 cup of maple syrup
  • 1 tsp of pumpkin pie spice
  • 1/4 cup of chopped pecans
  • 1/4 cup of dried cranberries
  • 1/2 tsp of vanilla extract
  • pinch of salt

Instructions

  1. In a medium saucepan, combine the rolled oats, pumpkin puree, milk, maple syrup, pumpkin pie spice, and salt.

  2. Cook over medium heat, stirring occasionally, until the oats are cooked and the mixture has thickened, about 15-20 minutes.

  3. Remove from heat and stir in the vanilla extract.

  4. Serve the pumpkin oatmeal in bowls and top with chopped pecans and dried cranberries.

  5. Enjoy warm.
