Ingredients
- 2 cups rolled oats
- 2 cups almond milk (or any non-dairy milk of your choice)
- 1 cup Greek yogurt
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/2 cup dried apricots, chopped
- 1/4 cup sliced almonds
Instructions

In a large bowl, combine the oats, almond milk, Greek yogurt, honey/maple syrup, and vanilla extract. Stir well to combine.

Gently fold in the chopped apricots.

Cover the bowl with plastic wrap or a lid and refrigerate overnight or for at least 4 hours.

In the morning, give the oats a good stir and divide into 4 serving bowls.

Top each serving with a sprinkle of sliced almonds.
