Ingredients
- 8 large eggs
- 1/4 cup of milk
- 1/4 tsp of salt
- 1/4 tsp of black pepper
- 1 cup of fresh baby spinach leaves
- 1/2 cup of crumbled feta cheese
- 1 tbsp of olive oil
- Chopped fresh parsley or chives for garnish (optional)
Instructions

In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.

Heat the olive oil in a large nonstick skillet over medium heat.

Add the spinach and cook for 2-3 minutes until wilted.

Add the egg mixture into the skillet and stir constantly with a spatula until the eggs are scrambled and cooked through, approximately 5-7 minutes.
