Ingredients
- 8 eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped bell peppers
- 1/4 cup chopped onions
- 1/4 cup chopped spinach
- Cooking spray
Instructions

Preheat the oven to 350°F (175°C). Grease a muffin tin with cooking spray.

In a bowl, whisk together the eggs, milk, salt, and black pepper.

Stir in the shredded cheddar cheese, chopped bell peppers, onions, and spinach.

Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.

Bake for 15-20 minutes or until the eggs are set and the tops are lightly golden.

Allow the muffins to cool for a few minutes before removing them from the tin.
