- 2 cups of spinach, chopped
- 1 cup of grated cheddar cheese
- 1 tablespoon of butter
- Salt and pepper to taste
Instructions
-
Preheat a pan over medium heat and melt the butter.
-
Add the chopped spinach to the pan and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.
-
In a separate pan, fry the eggs to your liking (e.g. sunny side up, over-easy, etc.).
-
Toast the bread slices to your desired level of doneness.
-
Spread the cooked spinach evenly onto 4 of the bread slices.
-
Sprinkle grated cheddar cheese on top of the spinach.
-
Place a fried egg on each of the remaining 4 bread slices and season with salt and pepper.
-
Sandwich the bread slices together, spinach and cheese side with the egg side, to form 4 sandwiches.
-
Place the sandwiches in a pan or sandwich press and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes on each side.
-
Remove the sandwiches from the pan and let them cool slightly before serving.
-
Cut the sandwiches in half or quarters and enjoy!
