How To Make Eggs Breakfast Quesadilla Recipe
A delicious quesadilla made with scrambled eggs, cheese, and vegetables.
Serves:
Ingredients
- 4 large tortillas
- 8 eggs
- 1/2 cup of diced tomatoes
- 1/4 cup of diced onions
- 1/4 cup of diced green peppers
- 1 cup of shredded cheddar cheese
- 1/4 tsp of salt
- 1/4 tsp of black pepper
- 1 tbsp of vegetable oil
- Salsa and sour cream for serving (optional)
Instructions

In a large bowl, whisk together eggs, salt, and black pepper until well combined.

Heat a large non-stick skillet over medium heat. Add oil and swirl to coat the pan.

Add diced onions and green peppers to the skillet and sauté until softened, about 2-3 minutes.

Add diced tomatoes to the skillet and stir well.

Pour in the egg mixture and cook until set, stirring occasionally.

Once the eggs are cooked, divide the egg mixture into four equal parts and place on one side of each tortilla.

Sprinkle each tortilla with cheddar cheese and fold the other half of the tortillas over the egg mixture.

Heat a large non-stick skillet over medium heat. Place the quesadillas in the skillet and cook for 2-3 minutes on each side or until golden brown and cheese is melted.

Cut each quesadilla into four equal pieces and serve with salsa and sour cream (optional).
