Ingredients
- 4 medium potatoes, peeled and grated
- 200g black pudding, crumbled
- 1 onion, finely chopped
- 2 eggs, beaten
- 2 tbsp flour
- Salt and pepper to taste
- Vegetable oil for frying
Instructions

In a large bowl, combine the grated potatoes, black pudding, onion, beaten eggs, flour, salt, and pepper.

Heat some vegetable oil in a frying pan over medium heat.

Take a handful of the potato mixture and shape it into a patty. Place it in the pan and flatten it with a spatula.

Cook the potato cakes for about 5 minutes on each side, until golden brown and crispy. Remove from the pan and drain on paper towels.

Repeat with the remaining potato mixture.

Serve the black pudding potato cakes hot, with a side of grilled tomatoes and scrambled eggs.
