Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup vegetable oil
- 3/4 cup brown sugar
- 1 tsp vanilla extract
- 2 cups shredded zucchini
Instructions

Preheat oven to 350°F. Grease a 9×5 inch loaf pan.

In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.

In a separate bowl, beat eggs. Add oil, sugar, and vanilla; mix well.

Add wet ingredients to dry ingredients; mix until just combined.

Fold in shredded zucchini.

Pour batter into prepared loaf pan.

Bake for 50-60 minutes, or until a toothpick inserted in the center of bread comes out clean.
