Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • 2 cups shredded zucchini

Instructions

  1. Preheat oven to 350°F. Grease a 9×5 inch loaf pan.

  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.

  3. In a separate bowl, beat eggs. Add oil, sugar, and vanilla; mix well.

  4. Add wet ingredients to dry ingredients; mix until just combined.

  5. Fold in shredded zucchini.

  6. Pour batter into prepared loaf pan.

  7. Bake for 50-60 minutes, or until a toothpick inserted in the center of bread comes out clean.

  8. Allow to cool for 10 minutes before removing from pan.
