  • 1 cup all-purpose flour

  • 1 1/2 cups milk
  • 2 eggs
  • cooking oil (for frying)

Instructions

  1. In a mixing bowl, combine the rolled oats, flour, baking powder, and salt.

  2. In a separate bowl, whisk together the milk and eggs.

  3. Gradually pour the milk and egg mixture into the dry ingredients, stirring well to form a smooth batter.

  4. Heat a non-stick frying pan over medium heat and lightly grease with cooking oil.

  5. Pour a ladleful of batter into the pan and swirl it around to evenly coat the bottom. Cook for about 2-3 minutes, until golden brown on the bottom.

  6. Flip the oatcake and cook for another 2-3 minutes until cooked through.

  7. Repeat with the remaining batter, adjusting the heat as needed to prevent burning.

  8. Serve the oatcakes warm with your choice of toppings like cheese, bacon, or breakfast sausage.
