Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 cup canned corn kernels, drained
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped pickled jalapenos

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a 9-inch square baking dish.

  2. In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar.

  3. In a separate bowl, whisk together the milk, vegetable oil, and egg.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Fold in the corn kernels, shredded cheddar cheese, and chopped jalapenos.

  6. Pour the batter into the greased baking dish and spread it evenly.

  7. Bake for 25-30 minutes or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.

  8. Allow the cornbread to cool for a few minutes before slicing and serving.
