How To Make Pumpkin Sweet Potato Bread

Put a twist on your fall baking with this recipe for pumpkin sweet potato bread. The tasty bread is covered with pecans and a maple vanilla glaze.

For Sweet Potato Bread:

  • cupsall purpose flour
  • 2tsppumpkin pie spice
  • 1tspbaking powder
  • 1tspbaking soda
  • ½tspsalt
  • 2largeeggs,beaten
  • 8ozpineapple,crushed, drained
  • 1cuppumpkin
  • 1cupsweet potato,grated
  • ¾cuplight brown sugar
  • ½tspground ginger
  • ¼cupvegetable oil

For Maple Glaze:

  • 4ozcream cheese,softened
  • ¼cupmilk
  • 6tbsppowdered sugar
  • 1tbspmaple syrup

Instructions

  1. Preheat oven to 350 degrees F. Spray a 9×5-inch loaf pan with cooking spray.

  2. In a large bowl, whisk together flour, pumpkin pie spice, baking powder, baking soda, and salt.

  3. In a medium bowl, mix eggs, pineapple, pumpkin, sweet potato, brown sugar, and ginger together.

  4. Add pumpkin mixture to the dry ingredients and stir until combined. Add oil, stirring to combine. Spoon into prepared pan.

  5. Bake for 55 minutes to 1 hour. Let cool completely on a wire rack.

  6. In a medium bowl, which cream cheese until smooth. Gradually add milk.

  7. Add powdered sugar and maple syrup, whisking until smooth. Drizzle on top of cooled bread. Sprinkle with chopped pecans.
