How To Make Khachapuri (Georgian Cheese Bread)

Ingredients

  • 2 cups all-purpose flour
  • 1 cup warm milk
  • 1 tbsp active dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 2 cups grated cheese (such as feta or mozzarella)
  • 2 tbsp butter, melted
  • 2 eggs

Instructions

  1. In a small bowl, dissolve the yeast and sugar in warm milk and let it sit for 5 minutes until foamy.

  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture, melted butter, and one beaten egg. Mix until dough forms.

  3. Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.

  4. Preheat the oven to 425°F (220°C). Divide the dough into 4 equal pieces.

  5. Roll out each piece into a circle about 8 inches in diameter. Place 1/2 cup of grated cheese in the center of each dough circle.

  6. Fold the edges of the dough in towards the center, pinching them together to seal the cheese inside. Flatten the filled dough slightly with your hands.

  7. Place the khachapuri on a greased baking sheet and brush the tops with the remaining beaten egg. Bake for 15-20 minutes or until golden brown and puffy.

  8. Serve hot and enjoy!
