Ingredients
- 2 1/4 teaspoons active dry yeast
- 1 teaspoon sugar
- 1 1/2 cups warm water
- 3 1/2 cups all-purpose flour
- 2 teaspoons salt
- 2 tablespoons olive oil
Instructions

In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for 5 minutes until it becomes foamy.

In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.

Stir until a shaggy dough forms, then turn the dough out onto a lightly floured surface.

Knead the dough for about 5-7 minutes until it becomes smooth and elastic.

Place the dough in a greased bowl and cover it with a damp cloth. Let it rise in a warm place for 1 hour or until doubled in size.

Preheat the oven to 500°F (260°C). Place a baking stone or baking sheet in the oven to preheat as well.

Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a ball and let them rest for 10 minutes.

On a lightly floured surface, roll out each ball of dough into a circle about 1/4 inch thick.

Carefully transfer the rolled out dough onto the preheated baking stone or baking sheet. Bake for 3-5 minutes until puffed and lightly golden.

Remove the pita bread from the oven and let it cool slightly before serving.
