  • 1 ½ cups shredded zucchini
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.

  2. In a large bowl, combine the shredded zucchini, all-purpose flour, whole wheat flour, baking soda, baking powder, cinnamon, and salt.

  3. In a separate bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.

  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Stir in the chopped walnuts, if desired.

  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.

  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
