Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 2 eggs
- 1/2 cup vegetable oil
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1 1/2 cups shredded zucchini
Instructions

Preheat oven to 350°F. Grease a 9×5-inch loaf pan with cooking spray.

In a medium bowl, whisk together flour, baking soda, cinnamon, cloves, nutmeg, and salt.

In a large bowl, beat eggs, vegetable oil, sugar, brown sugar, and vanilla extract until well combined.

Stir in the shredded zucchini.

Gradually add in the flour mixture, stirring until just combined.

Pour the batter into the prepared loaf pan.

Bake for 1 hour, or until a toothpick inserted into the center comes out clean.

Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
