Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup shredded coconut
- 1/2 cup crushed pineapple, drained
- 1/3 cup vegetable oil
- 2 eggs
Instructions

Preheat oven to 350°F. Grease a 9×5 inch loaf pan.

In a large bowl, whisk together flour, sugar, baking powder, and salt.

Stir in shredded coconut and crushed pineapple.

In a separate bowl, beat together vegetable oil and eggs.

Add wet ingredients to dry ingredients and mix until just combined.
