  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1/3 cup milk
  • 1 lemon, zest only
  • 1 1/2 cups fresh blackberries

Instructions

  1. Preheat oven to 350°F. Grease a loaf pan.

  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.

  3. In a separate bowl, beat eggs, then whisk in vegetable oil, milk, and lemon zest.

  4. Fold wet ingredients into the dry ingredients until just combined.

  5. Fold in blackberries.

  6. Pour batter into prepared loaf pan.

  7. Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean.

  8. Cool for 10 minutes before removing from pan and slicing.
