Serves:
Ingredients
- 2 Earl Grey tea bags
- 1/2 cup hot water
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 eggs
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup milk
Instructions
-
Preheat the oven to 350°F (175°C). Grease and flour four teacake molds or use a large muffin tray.
-
Steep the Earl Grey tea bags in the hot water for 5 minutes, then remove the tea bags and set aside to cool.
-
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
-
Beat in the eggs, one at a time, until well combined.
-
In a separate bowl, whisk together the flour, baking powder, and salt.
-
Gradually add the dry ingredients to the butter mixture, alternating with the cooled tea. Mix until just combined.
-
Stir in the milk until the batter is smooth and creamy.
-
Divide the batter evenly among the teacake molds or muffin cups.
-
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
-
Remove from the oven and let cool in the molds or muffin tray for 5 minutes before transferring to a wire rack to cool completely.
-
Serve the Earl Grey teacakes with a cup of hot tea or enjoy them on their own.
