Ingredients

  • 4 large ripe tomatoes, diced
  • 1 cup cherry tomatoes, halved
  • 2 cloves of garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh mozzarella, diced
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 slices of crusty baguette

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large mixing bowl, combine the diced tomatoes, cherry tomatoes, minced garlic, chopped basil, diced mozzarella, balsamic vinegar, olive oil, salt, and pepper.

  3. Toss well to combine all the ingredients.

  4. Place the baguette slices on a baking sheet and brush with olive oil.

  5. Toast the bread slices in the preheated oven for about 5 minutes, or until they turn golden brown and crispy.

  6. Remove the bread from the oven and let it cool slightly.

  7. Once the bread is cooled, top each slice with the tomato mixture, spreading it evenly.

  8. Serve immediately and enjoy!
