Ingredients
- 200g pitted dates, chopped
- 1 tsp baking soda
- 125ml boiling water
- 75g unsalted butter
- 75g demerara sugar
- 1 egg, beaten
- 175g self-raising flour
- 1 tsp ground ginger
- 1 tbsp malt extract
Instructions

Preheat the oven to 180°C (350°F). Grease and line a loaf tin.

Place the chopped dates in a bowl, sprinkle with baking soda, and pour over the boiling water. Let it sit for 5 minutes.

In a separate bowl, cream together the butter and sugar until light and fluffy.

Gradually beat in the egg, then fold in the flour and ground ginger.

Stir in the soaked dates and malt extract until well combined.

Pour the mixture into the prepared loaf tin and smooth the top.

Bake in the preheated oven for 1 hour, or until a skewer inserted into the middle comes out clean.

Remove from the oven and let it cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
