  • 2 ripe bananas, mashed
  • 1/2 cup cream cheese
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.

  2. In a mixing bowl, cream together the cream cheese, butter, and sugar until light and fluffy.

  3. Add the eggs one at a time, beating well after each addition. Stir in the mashed bananas and vanilla extract.

  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the banana mixture, mixing just until combined.

  5. Pour half of the batter into the prepared loaf pan. Drop spoonfuls of cream cheese on top, then swirl with a knife.

  6. Pour the remaining batter over the cream cheese layer. Smooth the top with a spatula.

  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  8. Remove from the oven and let cool in the pan for 10 minutes. Transfer to a wire rack to cool completely before slicing.
