Ingredients
- 2 clementines
- 1/2 cup sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 2 tbsp poppy seeds
- Zest of 1 clementine
- Juice of 1 clementine
Instructions

Preheat the oven to 350°F (175°C) and grease a loaf pan.

In a blender, puree the whole clementines until smooth.

In a large bowl, whisk together the sugar, vegetable oil, eggs, and vanilla extract. Add the clementine puree and mix well.

In a separate bowl, combine the flour, baking powder, salt, poppy seeds, and clementine zest.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
