Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup vegan butter, cold and cubed
- 1/2 cup vegan cheese, grated
- 3/4 cup unsweetened almond milk
- 1 tbsp apple cider vinegar
Instructions

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together flour, baking powder, and salt.

Add cold vegan butter to the flour mixture and use your fingers to rub it in until the mixture resembles breadcrumbs.

Stir in the grated vegan cheese.

In a separate small bowl, combine almond milk and apple cider vinegar. Let it sit for 5 minutes to curdle.

Make a well in the center of the flour mixture and pour in the almond milk mixture. Stir until just combined.

Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Be careful not to overwork the dough.

Pat the dough into a circle about 1-inch thick. Cut into 8 wedges.

Transfer the scones to the prepared baking sheet, leaving space between each scone.

Bake for 15-20 minutes, or until golden brown.
