Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh rosemary, finely chopped
  • 1 cup sharp cheddar cheese, grated
  • 1 cup mashed potatoes
  • 1/2 cup milk
  • 1/4 cup olive oil
  • 2 eggs, beaten

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.

  2. In a large bowl, combine flour, baking powder, salt, black pepper, and rosemary.

  3. Add grated cheese, mashed potatoes, milk, olive oil, and beaten eggs to the dry ingredients. Mix well until fully combined.

  4. Pour the batter into the greased loaf pan and smooth the top.

  5. Bake in the preheated oven for 60 minutes or until a toothpick inserted into the center comes out clean.

  6. Remove from the oven and let it cool in the pan for 10 minutes.

  7. Transfer the loaf to a wire rack to cool completely before slicing and serving.
