Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup cold butter, diced
  • 1 cup grated cheddar cheese
  • 1/2 cup chopped chorizo
  • 1/2 cup diced tomatoes
  • 1/2 cup milk
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, whisk together the flour, baking powder, and salt.

  3. Add the cold butter to the flour mixture and use your fingers or a pastry cutter to rub it in until the mixture resembles breadcrumbs.

  4. Stir in the grated cheese, chopped chorizo, and diced tomatoes.

  5. In a separate bowl, whisk together the milk and beaten egg.

  6. Gradually pour the milk mixture into the flour mixture, stirring until a soft dough forms.

  7. Turn the dough out onto a lightly floured surface and knead gently until it comes together.

  8. Shape the dough into a loaf and place it on a lined baking sheet.

  9. Bake for 25-30 minutes or until the loaf is golden brown and cooked through.

  10. Remove from the oven and allow to cool slightly before slicing and serving.
