Ingredients
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 cup cold butter, diced
- 1 cup grated cheddar cheese
- 1/2 cup chopped chorizo
- 1/2 cup diced tomatoes
- 1/2 cup milk
- 1 egg, beaten
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, whisk together the flour, baking powder, and salt.

Add the cold butter to the flour mixture and use your fingers or a pastry cutter to rub it in until the mixture resembles breadcrumbs.

Stir in the grated cheese, chopped chorizo, and diced tomatoes.

In a separate bowl, whisk together the milk and beaten egg.

Gradually pour the milk mixture into the flour mixture, stirring until a soft dough forms.

Turn the dough out onto a lightly floured surface and knead gently until it comes together.

Shape the dough into a loaf and place it on a lined baking sheet.

Bake for 25-30 minutes or until the loaf is golden brown and cooked through.
