How To Make Blackberry Shortbread Bars
These blackberry shortbread bars are cardamom-spiced sweet treats, filled with fruity blackberry jam and baked until golden-brown.

Ingredients
- 2cupsunsalted butter,softened
- 4egg yolks
- 4cupsall purpose flour
- 2cupswhite sugar
- 2tspbaking powder
- 1tspground cardamom
- ⅓tspsalt
- 1cupblackberry jam,at room temperature
- ¼cupconfectioner’s sugar
Instructions

Beat the butter in a bowl with an electric mixer until light and fluffy. Add the egg yolks to the butter one at a time, blending well after each addition.

Mix the flour, white sugar, baking powder, cardamom, and salt together in a bowl. Stir the flour mixture into the butter mixture until just combined.

Divide the dough in half and wrap each tightly in plastic wrap. Freeze for at least 3 hours.

Preheat oven to 350 degrees F. Grate 1 ball of frozen dough evenly into the bottom of a 9×13-inch baking pan.

Spread the blackberry jam over the grated dough, leaving ½-inch space around the edges. Grate the second ball of frozen dough over the jam.

Bake in the oven for 30 to 40 minutes until golden brown.

After shortbread cools, sprinkle with confectioners’ sugar and cut into bars. Serve and enjoy!
