Serves:
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tbsp unsalted butter, cold and cubed
- 3/4 cup milk
- 1 small beetroot, shredded
- 4 slices bacon, cooked and crumbled
- 1/2 cup cheddar cheese, grated
Instructions
-
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
-
In a large bowl, whisk together the flour, baking powder, and salt. Add the butter and use your fingers or a pastry cutter to cut it into the flour until it resembles coarse crumbs.
-
Gradually add the milk while stirring, until a soft dough forms.
-
Turn the dough out onto a floured surface and knead for 2-3 minutes, until smooth and elastic.
-
Roll the dough into a large rectangle, about 1/4 inch thick.
-
Spread the shredded beetroot, crumbled bacon, and grated cheddar cheese evenly over the dough.
-
Starting from one long side, tightly roll the dough into a log shape.
-
Cut the log into 1-inch thick slices and place them cut-side up on the prepared baking sheet.
-
Bake for 25-30 minutes, or until golden brown and cooked through.
-
Allow the scrolls to cool for a few minutes before serving.
