  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a bread loaf pan.

  2. In a large bowl, combine the mashed bananas, melted butter, brown sugar, eggs, and vanilla extract. Mix well.

  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  4. Fold in the rolled oats until evenly distributed throughout the batter.

  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.

  6. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and let cool in the pan for 10 minutes. Transfer the bread to a wire rack to cool completely before slicing.
