- 1tbspbutter
- 1cupall-purpose flour
- ½cupsemolina flour
- ½cupcornmeal,plus 2 tbsp for dusting
- 2tspbaking powder
- 1tspsalt
- 4cupsfresh spinach,chopped
- 3cupsbuttermilk
- 1cupfeta cheese,brine-packed*, crumbled
- 4eggs,lightly beaten
- ⅔cupvegetable oil
Instructions

Preheat oven to 400 degrees F. Butter 9×13-inch baking pan then sprinkle 2 tablespoons of cornmeal on bottom.

Sift all-purpose flour, semolina flour, ½ cup of cornmeal, baking powder, and salt together in a bowl.

Whisk spinach, buttermilk, feta cheese, eggs, and vegetable oil together in a separate large bowl. Stir flour mixture into spinach mixture just until pourable batter forms.

Pour batter into prepared baking pan.

Bake in preheated oven for 45 minutes or until a toothpick inserted into the center comes out clean.
