Serves:
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup unsweetened applesauce
- 1/2 cup chopped walnuts
- 1/2 cup raisins
Instructions
-
Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
-
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
-
In a separate bowl, cream together the melted butter, granulated sugar, and brown sugar until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
-
Gradually add the dry ingredients to the wet ingredients, alternating with the applesauce. Mix until just combined. Fold in the chopped walnuts and raisins.
-
Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
-
Remove from the oven and allow to cool in the pan for 10 minutes. Transfer the loaf to a wire rack to cool completely before slicing.
