  • 1 green bell pepper, diced

Instructions

  1. Preheat oven to 350°F.

  2. In a large bowl, whisk together eggs, salt, and black pepper.

  3. Heat olive oil in a 10-inch oven-safe skillet over medium-high heat.

  4. Add bell pepper and onion and sauté for 2-3 minutes.

  5. Pour in egg mixture and stir gently to ensure even cooking.
