How To Make Green Bell Pepper and Corn Chowder

A savory and creamy soup made with fresh green bell peppers and sweet corn.

Total: 40 minutes

Serves:

Ingredients

  • 2 tbsp butter
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 green bell peppers, diced
  • 2 cups corn kernels
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, melt butter over medium heat.

  2. Add onion and garlic, sauté for 5 minutes.

  3. Add bell peppers and corn, cook for additional 5 minutes.

  4. Pour in vegetable broth and bring to a boil.

  5. Reduce heat, cover and simmer for 15 minutes.

  6. Remove from heat and let it cool for a while.

  7. Puree the soup in a blender or food processor, return to the pot.

  8. Add heavy cream, salt and pepper, stir and heat through.

  9. Garnish with chopped parsley before serving.
