How To Make Green Bell Pepper and Corn Chowder
A savory and creamy soup made with fresh green bell peppers and sweet corn.
Serves:
Ingredients
- 2 tbsp butter
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 green bell peppers, diced
- 2 cups corn kernels
- 3 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions

In a large pot, melt butter over medium heat.

Add onion and garlic, sauté for 5 minutes.

Add bell peppers and corn, cook for additional 5 minutes.

Pour in vegetable broth and bring to a boil.

Reduce heat, cover and simmer for 15 minutes.

Remove from heat and let it cool for a while.

Puree the soup in a blender or food processor, return to the pot.

Add heavy cream, salt and pepper, stir and heat through.

Garnish with chopped parsley before serving.
