- 1.2 kg veal, cut into cubes
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 cup red wine
- 2 cups beef broth
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper, to taste
- 2 tbsp all-purpose flour
- 2 tbsp water
- Fresh parsley, for garnish

Heat the olive oil in a large pot over medium-high heat. Add the veal cubes and brown on all sides. Remove from the pot and set aside.

In the same pot, add the onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.

Return the veal cubes to the pot and add the red wine, beef broth, bay leaves, dried thyme, salt, and pepper. Bring to a boil, then reduce heat to low and cover. Simmer for 1.5 to 2 hours, or until the veal is tender.

In a small bowl, whisk together the flour and water to make a slurry. Stir the slurry into the stew, and cook for an additional 10 minutes, or until the stew has thickened.
