Serves:
Ingredients
- 500g ground beef
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 2 carrots, diced
- 400g can of diced tomatoes
- 400g can of butter beans, drained and rinsed
- 1 cup beef broth
- 1 tsp paprika
- 1 tsp oregano
- Salt and pepper, to taste
- Olive oil, for cooking
Instructions

In a large bowl, combine the ground beef, onion, garlic, paprika, oregano, salt, and pepper. Mix well and form meatballs.

Heat some olive oil in a large pan over medium heat. Cook the meatballs until browned on all sides, then remove from the pan and set aside.

In the same pan, add the diced onion, garlic, red bell pepper, and carrots. Cook until the vegetables are softened.

Add the diced tomatoes, butter beans, beef broth, and cooked meatballs back to the pan. Stir well and bring to a simmer.

Reduce the heat to low, cover the pan, and let the stew simmer for 30 minutes, stirring occasionally.

Taste and adjust seasoning if needed. Serve the stew hot with crusty bread.
