Ingredients
- 3 lbs beef chuck roast
- 1 onion, sliced
- 3 carrots, peeled and sliced
- 3 celery stalks, sliced
- 4 garlic cloves, minced
- 1 cup beef broth
- 2 tbsp Worcestershire sauce
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions

Heat a large skillet over medium-high heat and sear the roast on all sides until browned.

Place the sliced onions, carrots, celery, and minced garlic in the bottom of a slow cooker.

In a small bowl, whisk together the beef broth, Worcestershire sauce, tomato paste, dried thyme, and dried rosemary.

Pour the mixture over the vegetables in the slow cooker.

Place the seared beef roast on top of the vegetables and pour any remaining drippings from the skillet over the roast.

Cover the slow cooker and cook on low heat for 8 hours or until the beef is tender.

Once cooked, remove the beef roast from the slow cooker and let it rest for a few minutes before slicing.

Serve the sliced beef roast with the vegetables and spoon the cooking liquid over the top.
