Ingredients
- 2 lb sirloin of beef
- 1 onion, sliced
- 3 cloves of garlic, minced
- 2 sprigs of rosemary
- 1 cup beef broth
- 1 cup Port wine
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

Season the beef generously with salt and pepper.

In a roasting pan, place the sliced onion, minced garlic, and rosemary sprigs.

Place the seasoned beef on top of the onion mixture.

Roast the beef in the preheated oven for about 15 minutes per pound for medium-rare doneness.

While the beef is roasting, prepare the Port gravy. In a saucepan, combine the beef broth and Port wine. Bring to a boil and then reduce the heat to simmer for about 10-15 minutes until the gravy has reduced and thickened slightly.

Once the beef is cooked to your desired doneness, remove it from the oven and let it rest for about 10 minutes before slicing.

Serve the sliced roast beef with the Port gravy on the side.
