Ingredients
- 2 lbs beef brisket
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 stalks celery, sliced
- 1 cup beef broth
- 1 cup red wine
- 2 tbsp tomato paste
- 2 tbsp Worcestershire sauce
- 1 tbsp brown sugar
- 1 tsp dried thyme
- Salt and pepper, to taste
Instructions

Season the beef brisket with salt and pepper. Heat olive oil in a large pot over medium-high heat. Add the brisket and brown on all sides. Remove from pot and set aside.

In the same pot, add the diced onion and minced garlic. Cook until softened, about 5 minutes.

Add the sliced celery to the pot and cook for another 5 minutes.

Return the beef brisket to the pot. Add beef broth, red wine, tomato paste, Worcestershire sauce, brown sugar, and dried thyme. Stir to combine.

Bring to a boil, then reduce heat to low. Cover and simmer for 3 hours, or until the beef is tender.

Remove the beef from the pot and let it rest for a few minutes. Slice it against the grain.

Serve the sliced beef brisket with the braised celery and sauce.
