Ingredients
- 1.5 kg rib of beef
- 2 tbsp olive oil
- 2 tbsp freshly ground black pepper
- 2 tbsp dried rosemary
- 2 tbsp dried thyme
- 2 tbsp garlic powder
- 1 tbsp salt
Instructions

Preheat the oven to 180°C (350°F).

Rub the olive oil all over the rib of beef, ensuring it is evenly coated.

In a small bowl, mix together the black pepper, dried rosemary, dried thyme, garlic powder, and salt.

Sprinkle the herb and pepper mixture over the rib of beef, pressing it gently to adhere.

Place the rib of beef on a roasting rack in a roasting pan.

Roast in the preheated oven for approximately 2 hours, or until the internal temperature reaches your desired doneness (about 60-65°C for medium-rare).

Remove the rib of beef from the oven and let it rest for 10-15 minutes before slicing.

Slice the rib of beef and serve with your favorite sides.
