Ingredients
- 1 lb lean ground beef
- 1/2 cup whole wheat breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cups low-sodium beef broth
- 2 cups water
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup whole wheat egg noodles
- 2 cups baby spinach leaves
- Fresh parsley, for garnish
Instructions

In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic powder, oregano, salt, and black pepper. Mix well and form into small meatballs.

Heat a large pot over medium heat and add the meatballs. Cook for about 5 minutes, until browned on all sides. Remove the meatballs from the pot and set aside.

In the same pot, add carrots, celery, onion, and garlic. Cook for 5 minutes, until vegetables are slightly softened.

Add beef broth and water to the pot. Bring to a boil and then reduce heat to simmer.

Return the meatballs to the pot and add the egg noodles. Cook for about 10 minutes, until noodles are tender and meatballs are cooked through.

Stir in baby spinach leaves and cook for an additional 2 minutes, until wilted.

Serve the soup hot, garnished with fresh parsley.
