Ingredients
- 2 lbs beef chuck, cubed
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cloves of garlic, minced
- 1 cup red wine
- 2 cups beef broth
- 2 tbsp tomato paste
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 4 medium-sized beetroots, peeled and diced
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
Instructions

In a large pot, heat olive oil over medium heat. Add onions, carrots, celery, and garlic. Cook until onions are translucent.

Add beef to the pot and brown on all sides.

Pour in red wine and let it simmer for a few minutes to reduce.

Add beef broth, tomato paste, bay leaves, thyme, rosemary, salt, and pepper. Stir well.

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 2-3 hours, or until the beef is tender.

In the meantime, preheat the oven to 400°F (200°C).

In a separate bowl, mix together paprika, cayenne pepper, cinnamon, cumin, and coriander.

Toss the diced beetroot in the spice mixture until well-coated.

Spread the seasoned beetroot on a baking sheet and bake for 20-25 minutes, or until tender.

Serve the daube of beef with the spiced beetroot on the side.
