Ingredients
- 2 pounds of beef chuck roast, cut into chunks
- 2 tablespoons vegetable oil
- 1 medium onion, sliced
- 3 garlic cloves, minced
- 2 tablespoons fresh ginger, peeled and grated
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 2 cups beef broth
- 1/4 cup water
- 1 tablespoon cornstarch
- Salt and pepper, to taste
- Chopped green onions, for garnish
Instructions

Heat the vegetable oil in a large, heavy-bottomed pot over medium-high heat. Season the beef chunks with salt and pepper, then brown them on all sides in the hot oil. Remove the beef from the pot and set aside.

In the same pot, add the sliced onion, minced garlic, and grated ginger. Sauté until the onion is softened and translucent, about 5 minutes.

Return the browned beef to the pot and add the soy sauce, rice vinegar, brown sugar, beef broth, and water. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 1.5 to 2 hours, or until the beef is tender and easily shreds with a fork.

In a small bowl, whisk together the cornstarch with 2 tablespoons of cold water. Stir the cornstarch slurry into the pot and simmer uncovered for an additional 10 minutes, or until the sauce has thickened.

Serve the braised beef with ginger over steamed rice or noodles. Garnish with chopped green onions.
