Ingredients
- 1.5 lbs beef brisket
- 4 cups beef broth
- 2 cups baby carrots
- 1 onion, diced
- 2 cloves garlic, minced
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper, to taste
- For the dumplings:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tbsp fresh parsley, chopped
- 1/2 cup milk
- 2 tbsp butter, melted
Instructions

In a large pot, bring the beef broth to a boil. Add the beef brisket, onion, garlic, bay leaves, thyme, salt, and pepper. Reduce the heat to low, cover, and simmer for 1.5 to 2 hours, until the beef is tender.

Remove the beef from the pot and set aside. Add the carrots to the pot and simmer for an additional 10 minutes until tender.

In a mixing bowl, combine the flour, baking powder, salt, and parsley for the dumplings. Stir in the milk and melted butter until just combined.

Drop spoonfuls of the dumpling batter onto the simmering broth. Cover and cook for 15 minutes, until the dumplings are cooked through.

Meanwhile, shred the boiled beef using two forks.

Serve the boiled beef and carrots with the parsley dumplings, and ladle some of the broth over each serving.
