Ingredients
- 4 beef fillet steaks (6 oz each)
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 tbsp Dijon mustard
- 8 slices of prosciutto
- 1 sheet of puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 400°F (200°C).

Season the beef fillet steaks with salt and pepper.

Heat the olive oil in a skillet over high heat. Sear the steaks for 2 minutes on each side. Remove from heat and let them cool down.

Brush each steak with Dijon mustard.

Place 2 slices of prosciutto on top of each steak.

Roll out the puff pastry sheet and cut it into 4 equal squares.

Place each steak on a puff pastry square and fold the pastry over, sealing the edges with egg wash.

Transfer the beef Wellingtons to a baking sheet lined with parchment paper.

Brush the pastry with egg wash.

Bake for 25-30 minutes or until the pastry is golden brown and the beef is cooked to your desired level of doneness.

Let the beef Wellingtons rest for a few minutes before serving.
